The Preserving Summer: Apples event will explain the scientific reasoning behind today's recommended methods for home food preservation while dispelling food preservation myths and unsafe practices of the past. Amber will demonstrate a water bath canning recipe featuring apples and talk about other safe ways to preserve apples at home and avoid waste.
In recent years, there has been increasing interest in home food preservation. Canning, freezing, fermenting, and drying are preservation methods that allow you to enjoy seasonal foods all year long. While these methods of home food preservation have existed for centuries, we have learned much about the science behind these methods in the last few years.
The ​Preserving Summer: Apples​​ workshop will provide you with the scientific background, preparation tips, and safe processing methods to preserve food at home. Amber will feature water bath canning, dehydrating, freeze-drying, and fermentation specifically around apples. There will be a sensory portion of this workshop where participants will get to taste  preserved apple treats.
Presenter Bio:
Amber is originally from Oklahoma and has served in leadership roles within the Food & Beverage industry over the last 20 years, all over the country, including Missouri, California, Washington D.C., and Tennessee. Amber earned her B.A. in Business Administration with an emphasis on Applied Organizational Leadership and her Master of Business Administration from MNU in Olathe, KS. She will begin her M.S. in Food Science and Technology this fall at NMSU. 
 
Amber serves as an Assistant Professor | Family and Consumer Sciences Agent with New Mexico State University serving Bernalillo County with a focus on food systems and is the instructor for the Master Food Preserver volunteers. Amber is passionate about empowering others and connecting her community to the world around them through food. Her programs focus primarily on food preservation education, food safety management, and supporting small food business.
